Don't Throw Away That Peanut Butter Jar!!!
Thrifty Peanut-Sesame Salad Dressing
I don't know about you, but I never get all of the peanut butter out of the jar. There is always a little bit stuck to the sides that I end up throwing away. This recipe, uses that little bit clinging to the sides to give the dressing a nice peanut flavor.
Makes: enough dressing for about 4 salads
Ingredients:
- 1 "empty" peanut butter jar
- 2-3 TBSP canola oil
- the juice of 1/2 lime
- 1 tsp sesame oil
- 1 tsp sesame seeds
- 1/2 clove garlic, minced
- 1 TBSP sliced scallions (green part)
- 1/4 tsp crushed red pepper
- pinch of salt

Directions:
- Place all ingredients into your peanut butter jar (start with 2 TBSP of canola oil).
- Shake to combine. If your dressing is too thick, add another TBSP of oil and shake some more.
- Pour a couple teaspoons of dressing over delicious greens and veggies.
