Don't Throw Away That Peanut Butter Jar!!!

Thrifty Peanut-Sesame Salad Dressing

I don't know about you, but I never get all of the peanut butter out of the jar.  There is always a little bit stuck to the sides that I end up throwing away.  This recipe, uses that little bit clinging to the sides to give the dressing a nice peanut flavor.



Makes: enough dressing for about 4 salads

Ingredients:

  • 1 "empty" peanut butter jar
  • 2-3 TBSP canola oil
  • the juice of 1/2 lime
  • 1 tsp sesame oil
  • 1 tsp sesame seeds
  • 1/2 clove garlic, minced
  • 1 TBSP sliced scallions (green part)
  • 1/4 tsp crushed red pepper
  • pinch of salt

The toddler decided that shaking the jar looked like fun!

Directions:

  1.  Place all ingredients into your peanut butter jar (start with 2 TBSP of canola oil).  
  2. Shake to combine.  If your dressing is too thick, add another TBSP of oil and shake some more.
  3. Pour a couple teaspoons of dressing over delicious greens and veggies.
