Sesame-Ginger-Tofu Stir Fry
Tofu stir fry is one of those recipes that every vegetarian needs to have in their repertoire. Tofu is full of lean protein, and the veggies are full of vitamins and minerals. It's an all around great meal.
Tofu is one of my toddlers favorite foods (lucky, I know), so we have this dish and variations on it quite a bit. This recipe has a couple extra steps than your average stir fry, but they are well worth it, plus stir fry cooks up so quickly that you have the extra time. The tofu is pressed, then baked for superior texture. The broccoli and carrots are steamed (very lightly) because, I find, that steaming develops their flavors better than frying.
Serves: 4
Ingredients:
- 1 block firm tofu
- 1 carrot, peeled and sliced
- 1 large head broccoli broken into bite sized pieces (about 4 cups)
- 1 TBSP oil for frying plus extra for greasing (I used canola)
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1 tsp fresh grated ginger
- 1 stalk celery, sliced
- 1 TBSP soy sauce
- 1 TBSP sesame seeds
- 1 tsp sesame oil
- 1/2 tsp apple cider vinegar
Directions:
- Preheat your oven to 350 degrees F.
- While your oven is heating up. slice your tofu into 3 pieces. Place a couple of paper towels on a plate, then place your tofu on top of the paper towels. Like this:
- Put a couple paper towels on top of your tofu, and cover with another plate. Put a weight of some kind, like a can of beans on top of the plate and let it sit for 10 minutes.
- Cut the tofu into strips and bake on a greased cookie sheet for twenty minutes, turning halway through.
- Meanwhile, steam the broccoli and carrots in a little bit of water, until the broccoli starts to brighten and the carrots become just tender.
- Once your tofu and steamed vegetables are prepared, you are ready to stir fry. Heat your oil in a frying pan or wok on high heat. Add the onions, and cook about 2 minutes, stirring frequently.
- Add in the garlic, celery, and ginger and cook, stirring frequently for another minute.
- Stir in the rest of your ingredients and cook for another 3-4 minutes, stirring frequently.
