Carrot Hash
I wanted a little more for breakfast than just pancakes or cereal. This adds little side dish adds flavor to your breakfast without piling on the calories or carbs. It is also a non omelet way to get your veggies in the morning!Ingredients:
- 1 TBSP olive oil
- 4 carrots, grated
- 1 onion, chopped
- salt and pepper, to taste
Directions:
- Heat the oil in a saute pan over medium heat. Add the onions, and cook until translucent, about 2-3 minutes.
- Add in the carrots, salt, & pepper. Reduce heat to low, and cook, stirring occasionally for about ten minutes or until the carrots are tender and just start to brown.
- Serve with any breakfast food you like!
