A small bowl of finished carrot hash.

Carrot Hash

I wanted a little more for breakfast than just pancakes or cereal.  This adds little side dish adds flavor to your breakfast without piling on the calories or carbs.  It is also a non omelet way to get your veggies in the morning! 

Ingredients:

  • 1 TBSP olive oil
  • 4 carrots, grated
  • 1 onion, chopped
  • salt and pepper, to taste

Directions:

  1. Heat the oil in a saute pan over medium heat.  Add the onions, and cook until translucent, about 2-3 minutes.
  2. Add in the carrots, salt, & pepper.  Reduce heat to low, and cook, stirring occasionally for about ten minutes or until the carrots are tender and just start to brown.
  3. Serve with any breakfast food you like!
