Completely Vegan!

Everyone needs a good recipe for a black bean burger.  It is a vegetarian classic for a reason.  Black beans have a great hearty flavor that lends itself well to being made into a burger.  This version is not overly spicy, it has a more subtle flavor from the mixture of red onion, fresh tomato, and green bell pepper mixed with the beans.  If you prefer a spicier burger, you could increase the chili power or mix in some sriracha.

Toppings are kind of the fun part of eating burgers.  You can top this burger with the traditional lettuce, tomato, onion, and pickle or you could add on jalapenos, olives, or salsa.  Have fun!

For a weeknight meal, I would recommend making the patties the night before and put them on the greased cookie sheet.  Then cover with plastic wrap.  When you are ready to start making dinner, simply preheat the oven, remove the plastic, and bake.

  • 1 TBSP olive oil
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 plum tomato, diced
  • 1/4 tsp salt
  • 1/4 tsp chili powder
  • (2) 15.5 oz cans black beans
  • 1/4 cup whole wheat flour


  1. Preheat the oven to 375 degrees F.
    Who needs bread?  Serve your vegan black bean burger on lettuce!
  2.  Drain and rinse the beans.  Mash with a fork in a medium size bowl.  Set aside.
  3. Heat the oil in a frying pan on medium heat.  Add in the onion and cook for 3 minutes.
  4. Add the garlic and cook for another minute.
  5. Mix in the bell pepper, plum tomato, salt, & chili powder.  Cook for 4-5 minutes, stirring frequently. 
  6. In a large bowl, mix together the veggies, mashed black beans, and flour (The best way that I have found to do this is to just use your hands).
  7. Form into 6 patties.  Arrange on a greased cookie sheet.
  8. Bake for 12 minutes on each side.
  9. Assemble the burger on a bun or a lettuce wrap with your favorite toppings.
